What’s Up, Chicago?
Even on Thursday, the weekend can feel far away. Here’s 45 seconds of zen courtesy of one of our neighbor rabbits yesterday, a rare sunny day that also produced the following photo of a tulip tree in full bloom against a clear blue sky.
Roasted Asparagus: So Easy, So Delicious
It must be pretty obvious by now that I enthuse over our local asparagus season. One reason is that I believe that roasted asparagus is one of the easiest delicious things you can make.
How easy?
Preheat your oven at 375-400 degrees.
Snap off the woody ends (but don’t throw them out, you can use them for stock or slice and saute them until they’re soft — they are totally edible)
Lightly splash on some olive oil to coat and lightly season with salt and pepper (and garlic or onion powder if you like).
Roast for about 15 minutes if you like the spears al dente, 20 minutes or so if you want them a little brown, and 25 minutes or so if you like them a little charred and crispy.
You can add other stuff and adjust the cooking times as necessary. I tossed in a couple of ramps just for the last few minutes (they cook really fast).
That’s all there is to it, folks. A few weeks of easy feasting ahead.
