A Big Ol’ Mess of Comfort Food
Mostly catching my breath after a wildly busy stretch, but I can’t let the whole weekend pass without a shoutout to one of the true joys of Thanksgiving: the leftovers sandwich.
My favorite indulgent comfort food, the leftovers sandwich is an irresistible mess. This version started with lightly toasted rustic rye bread. I spread a little mayo and some homemade cranberry sauce on each side, then topped one piece of bread with sliced turkey breast, dressing, and pan gravy. (I added a little mashed potato to a second version of this sandwich.) Close it up, slice and eat.
Sometimes you’ve just got to play with your food.
One of the problems with making a normal-sized amount of cranberry sauce is that we go through it so fast. So, lest we run out while there is still plenty of turkey left, I made a big pot of cranberry- apple sauce. Yum.
