Living in a place where Lake Michigan is practically in our “backyard” is one of the joys of being adopted Chicagoans over the past 11-1/2 years. I will admit that our easy access to this natural beauty is typically under-utilized during the winter — cold weather does tend to unmotivate us.
Yesterday was just the day to get us back on the Lakefront Trail. As you can see above, it was totally cloudless, and temperatures in the low 50s enabled me to shed the Big Coat for a sweater and more spring-like jacket.
Happy to share the skyline view from Diversey Harbor, with a promise of even better days to come.
To cap the lovely day and set the stage for watching one of the better Super Bowl contests, a darn nice sunset.
Gotta Frittata for You
Lidia Bastianich — the TV cooking show host and partner in Eataly USA — is one of my favorite cookbook authors. I’ve always been a fan of uncomplicated recipes, and Lidia has a straightforward approach focused on letting the flavors of a handful of excellent ingredients shine through.
Her latest recipe book, Lidia’s A Pot, A Pan, and a Bowl — co-authored with daughter Tanya Bastianich Manuali — is another great example of her less-is-more approach.
Yesterday I tried the second recipe in the book, a sweet potato and prosciutto frittata. Sweet potatoes aren’t too frequently used as breakfast ingredients, but if you’ve ever had them as part of a ham dinner, you know that they play well together.
As you can see above, the recipe presents beautifully, and is just as tasty. As I’ve mentioned before, cut a frittata into eighths — each wedge is a pretty substantial meal — and you have leftovers for more breakfasts.
