Tasty and Easy Tofu Treat
In partnership with University of Illinois Extension and UI Health, Local Food Forum is happy to share a series featuring healthy, tasty and affordable recipes. The series supports UI Extension’s Eat.Move.Save. program, which provides tips and information on how to eat healthy on any budget.
Thanks to Bianca Bautista of UI Extension Cook County, who produces this fun and informative feature. This week’s installment features a superb easy Garlic-Ginger Tofu recipe that sounds delicious. I’m getting me some tofu when I get back from Springfield.
More Everything Local Coverage Coming Soon
Just a note that I’ll have lots more coverage of the great content at the Everything Local Conference in Springfield coming soon. Today (Friday) is the last day of the three-day conference. At 1 p.m., I’m participating in a panel titled Boosting the Local Food Signal in Media, then heading off for what I hope will be an uneventful trip home if the Amtrak gods are smiling on me.
