Chef Sebastian’s Appetite to Help Youth in Poverty
I have written about The Evolved Network quite a bit over the past few weeks. This impressive non-profit, founded in 2021 by chef and clinical psychologist Sebastian White, is on the verge of launching a campaign to raise funds sufficient to meet his goal: helping impoverished Chicago youths by creating a restaurant and food garden in which they will gain job, farming and business skills while receiving counseling and therapeutic services.
In the meantime, Sebastian holds cooking classes for students at three Chicago schools and does cooking demos for adults to raise awareness of The Evolved Network. Barb and I had the pleasure of attending his chef demo at Green City Market, where he showed attendees how to make a scrumptious dish of duck fat-fried radishes and potatoes.
